Grilled Kansas filet mignon, finished with brandy-peppercorn-cream sauce, served on a bed of fingerling potatoes mashed with duroc bacon, aged cheddar and chives, with grilled asparagus

Pan-seared Georges Bank Sea Scallops with maple-bourbon glaze, served on a bed of wild mushroom risotto, with grilled asparagus.

Slow-roasted. locally-raised cornish hen finished with sauteed fresh
