roasted beat salad on baby spinach with pistachio-crusted goat cheese

root beer-braised pork belly confit on a bed of creamy maytag polenta

Entree (please select one)
Grilled Kansas filet mignon, finished with brandy-roasted wild mushroom-cream sauce, served on a bed of fingerling potatoes mashed with white truffles, with grilled asparagus

Grilled Wester Ross salmon from Scotland, finished with a fig glaze, served on a bed of lemon couscous with pan-wilted baby spinach.

Slow-roasted. cornish hen glazed with lemon and fresh thyme, served on a bed of sauteed fresh green beans and shittake mushrooms
