Specials June 4 and 5

I am constantly amazed at just how awesome the foods available to us here the United State really are. This weekend we have a jam-packed lineup of stellar ingredients that will make any reasonable goodie begin to drool just by reading about them.

For Friday, we received in two whole wild-caught King Salmon from the Wind River in Washington. These fish were caught at the peak of the season yesterday by Native American fisherman, and came straight from the boat to Manhattan. They are simply magnificent, beautiful color, delicate texture, and decadent flavor.

On Saturday we are offering Kobe Ribeye Steaks from Mishima Ranch finished with fresh morels. These steaks grade at several levels better than USDA Prime. What details can you add to thank to make it more enticing?

Even the Oysters are a treat this weekend. We have several dozen Delaware Bay wild-caught oysters. They are some of the finest that the east coast has to offer, and their fishing is very limited.

Soup – French Onion with authentic Gruyere
Special – Mishima Ranch Kobe Ribeye Steak, grilled and finished with fresh Morel-brandy-cream sauce. Served on a bed of roasted garlic smashed red potatoes and grilled asparagus.
Suggested wine – Cru by Vineyard 29 Cabernet Sauvignon

Amuse – Cucumber-ginger agua fresca
Starter – Chilled avocado soup with blue crab
Entree – Friday – Wind River King Salmon with Dijon-cream

Dessert – Chocolate bread pudding – homemade brioche baked into rich chocolate custard, finished with caramel sauce
