Specials for weekend of December 6-7
I went with a creole white shrimp on an Andouille risotto for the seafood this weekend. And I selected some beautiful rabbits from Callene Rapp locally-raised at the Rare Hare Barn. These Kansas rabbits are the objects of envy of chefs all across the nation! I slow-braised these rabbits and finished them with Dijon-cream sauce. We will also offer wonderful rabbit stew as the appetizer.

Soup – rabbit stew with cremini mushrooms
Special – gulf of mexico white shrimp pan sautéed and finished with tomato creole sauce, served on a bed of sofitto-andouile risotto.

Special – Locally raised white rabbit from Rare Hare slow-braised in white wine with aromatic vegetables and fresh herbs, finished with Dijon-cream sauce, on a bed of roasted root vegetable mash.
