Red Snapper and Veal Chops Specials Sept 9-10

The veal that I was supposed to have last week finally showed up! (That’s all right, we ended up substituting beautiful local lamb chops for last week). I had thought of saving it for another time, but honestly it is some of the best looking meat I have ever seen, and I had to sear them up this weekend. Great news is that I was able to get a hold of some beautiful, fresh, golden Chanterelle mushrooms today that will be divine with the veal. I also have a fantastic red paired with the dish, a Rosso di Montalcino from Casalnova di Neri. This Tuscan Sangiovese is the baby brother to Brunello amd with less time spent in barrel, this wine is beautiful to drink now, and Casalnova di Neri is my favorite producer.

Oh man! The fish special is going to be awesome this weekend! I brought in some fantastic, ultra-fresh Red Snapper that will knock your socks off. I had been thinking of doing an all-Tuscan weekend, but this fish just screamed for a super-fresh tropical preparation. With the fall fast approaching, this is as fresh and tropical as it can be without a hurricane hitting us.

There are still a few seats remaining for each of the dinners next week, and I hear from the guys at Cliff Lede that the winery may bring a few extra wines. As if that wasn’t enough, the Poetry red is going to be the 2007 vintage, which rated 97 points. Wow!

Special – Ultra-fresh American Red Snapper delicately prepared sous vide with fresh lime, white wine, red onion, fresh mango, and Fresno chiles, finished with shredded jicama and fresh cilantro, served on a bed of coconut-green curry-infused sweet potatoes, with grilled zucchini.

Soup – French Onion with authentic Gruyere
Special – Canadian white veal chop, pan-seared and finished with fresh Chanterelle mushrooms, thyme and Marsala wine, served on a bed of rapini sauteed with fresh garlic.

This Weekend’s Prix Fixe Menu
Amuse – polenta cake with peppadew peppers
Starter – Antipasto platter for two, of Sopressata Salami, Pecorino cheese, Medjool dates, grilled zucchini, Peppadew peppers, olives, cornichons, country mustard, and multi grain crostini
Entrees – Sous Vide Red Snapper, Seared Veal Chop
Dessert – Maple Mascarpone Cheesecake – individually baked mascarpone cheesecakes finished with maple cream drizzle and walnut shortbread crumbles
