Hawaiian Walu and Braised Short Ribs – Specials Jan 14 and 15

Some fantastic events and specials are coming up soon!

First, the specials for this weekend will excite your taste buds, and quicken your heart. I have some ultra-fresh walu (escolar) coming in from Hawaii tomorrow, and reports are that it is snow white, and incredibly pure tasting, I have put together a playful and delicious special to highlight those flavors. And beef short ribs are slow-braised with fresh herbs and wine so long and delicately, that you can enjoy this t-rex sized cut of beef without any need for a knife! And how about some mussels sauteed in a saffron broth for a special appetizer?

There is a sushi dinner coming up on January 27 that will feature only the most impressive fish. Please remember that for everything item we serve at 4 Olives we only use ultra-fresh, never frozen fish from pure cold waters, harvesting sustainable populations of fish, and using short line, day boat methods that do not damage the environment. When eat our fish, you can feel good about it! (and it taste super good, so there’s nothing to lose)

It’s not too early to make your Valentines Day reservations. Really, it’s already getting crazy.

Finally, I am honored to announce that Dan Stoesbery of Ladera Vineyards will join us for a fantastic wine dinner on February 22. Dan is the national sales manager and son of the owners of Ladera, and a great guy who will present a fun dinner. And the wines, we are lucky even to have them in Kansas, the Howell Mt Cabernet Sauvignon was on the Wine Spectator Top 100!

Maki roll of spicy lobster tail, fresh mango, jicima, and cilantro
Inside-out maki roll, crusted with toasted panko and filled with cucumber and spicy King salmon

Specials – Friday, January 14
Soup – Cream of Wild Mushroom with fresh Porcini
Special – Ultra fresh Hawaiian Walu grilled with a ponzu glaze, served on crispy cilantro-risotto cakes and grilled zucchini, finished with mango-avocado salsa, roasted red pepper coulis, and cilantro oil.

Specials – Saturday, January 15
Soup – French Onion with authentic Gruyere
Special – Beef short ribs slow-braised in red wine with aromatic herbs and vegetables, finished with a red wine reduction glaze, served on a bed of fresh, black trumpet mushroom risotto and grilled asparagus.

This Weekend’s Prix Fixe Menu
Amuse – Goat-cheese stuffed grape tomato with sherry reduction
Starter – Fresh, Prince Edward Island mussels sauteed in saffron broth with fresh herbs, garlic, and white wine.
Entrees – Hawaiian Walu ponzu glazed, Beef short rib in red wine
Dessert – Lemon cheesecake parfait withfresh blueberries and crumbly shortbread.

Featured Cocktail – Aperoltif
the perfect pre-meal drink! aperol (similar to campari, but less bitter), champagne, martin millers gin, cucumber peel.
