Grilled Prawns and Grilled Filet Mignon – Specials Nov 2-3
I had some dental work done this week that left me at home for a few days on an all liquid diet. That time off thinking about food left me with some serious cravings for the specials this weekend. I hope you enjoy the ideas that I came up with, half of the creative credit goes to the pain medication!
How about some bacon-wrapped prawns to begin with? We recently picked up a new cheese, kind of the ultimate cheese for guys. It is an aged cheddar with pieces of bacon in it, that is then smoked. I am mixing this cheese into polenta to work with the prawns.
I am also featuring a filet with basil-pesto infused mashed potatoes. The special appetizer is my fall classic, a roasted pumpkin risotto with proscutto and wild mushrooms.
Good luck to the Wildcats this weekend as they take care of OSU. I don’t know how Oregon continues to be ahead of K-State in the AP poll. Those writers must have been impressed with Oregon’s strength of schedule where their best game so far is against a barely ranked Arizona, or perhaps last week’s victory over an impressive 1-7 Colorado. We play in the Big 12, where almost every game is against a ranked opponent. Maybe the AP will get it right next week. Go K-State!
