Florida Grouper, AMerican Bison Osso Buco – Specials March 1-2
I received some really cool items to work with for specials this weekend! I have a limited amount of Colorado Bison Osso Buco that I will slow braise and serve on a bed of wild mushroom risotto. We also have Florida Grouper that will be pan seared and served with an asparagus cream sauce on fennel potatoes, those just can’t be beat!
I know I just sent out the e-mail, but the Paul Hobbs Argentina Wine Dinner on March 20 is almost sold out. If you are thinking that you might want to join us, I would suggest making your reservations soon.
Special Entrees – Friday and Saturday
Soup – Roasted Zucchini
Special – Pan-seared Florida Grouper finished with asparagus-cream stock, served on a bed of roasted fennel-mashed potatoes, and pan-wilted baby spinach.

Special – Colorado Bison Osso Buco, slow braised with aromatic vegetables, served on a bed of roasted wild mushroom risotto, with grilled asparagus

Amuse – grape tomato and mozzarella kebabs
Starter – seared zucchini and roma tomatoes with penne pasta in white wine garlic sauce.
Entrees – Seared Florida Grouper, American Bison Osso Buco
Dessert – Black and white cheesecake
Featured Cocktail – Barrel-Aged Negroni
Campari, Carpano Vermouth, Plymouth Gin, barrel-aged six weeks, finished with a splash of soda water and an orange twist.
