Apple-glazed King Salmon, White Truffle Filet Mignon – Specials Sept 30 – Oct 1

Lots going on this weekend, sushi tonight (including California Sea Urchin roe – Uni – Limited), great specials all weekend, a new wine list, new desserts, and five new cheeses!

First, we are coming near the end of the King Salmon season. This weekend, we have some wonderful Reds from Alaska that are looking fantastic for the grill. I went with an autumn theme and used an apple-bourbon glaze and a wild rice risotto. The filet this weekend will be worth the visit! I mean, it’s a filet with truffles, how much better could it get?

Soup – French Onion with authentic Gruyere
Special – Kansas Black Angus filet mignon grilled and finished with creamed spinach and garlic sauce, topped with baby arugula with mushroom vinaigrette, served on a bed of white truffle mashed Yukon Gold potatoes.

Amuse – Pecorino cheese and fig preserves crostini
Starter – Shrimp, goat cheese, and sun-dried tomato stuffed ravioli pan toasted and finished with basil-pesto-cream sauce
Entrees – Apple-glazed King Salmon or White Truffle Filet Mignon
Dessert – Basque Apple Tart – deep dish apple tart with lightly spiced new crop Honeycrisp apples and soft sugar cookie style crust served ala mode
