Tarte Flambée – pastry crust topped with onions, duroc bacon, fromage blanc, crème fraîche, Gruyère de Comté, and wild chanterelle mushrooms

Terrine of fresh Hudson Valley foie gras with fresh, Oregon black trufffles and confit of green apple

Choucroute Garnie – aromatic, lightly-pickled baby cabbage served with house-cured Duroc ham, house-made white sausage, and duck sausage marinated in Pinot Gris for two days then slowly-braised with aromatic spices (bay, clove, allspice, juniper) and baby potatoes and carrots
