Alaskan Halibut with Morels, Bison with Roquefort Sauce – Specials July 16-17

We found out today that, once again, we were honored with a Wine Spectator Best of Award of Excellence for 2010. We continue to be the FIRST and ONLY restaurant in Kansas to be given the distinction. No need to travel to Kansas City, all the wines are right here in Manhattan!

We were lucky this week and scored some delicious Alaskan Halibut. I am bringing in a whole fish, by cutting it down in house, get it a few days fresher. Halibut this fresh is hard to find even in the Northwest, and some fresh mid summer morel mushrooms are about the only thing that could make it even better!

We also have delicious Kansas-raised Bison ribeyes that I will finish with a Roquefort blue cheese sauce and sauteed fresh Chanterelle mushrooms.

Sesame-crusted maki roll of Ahi Tuna with cucumber, avocado, cilantro, and red pepper

Soup – Cantaloupe-Tomato Gazpacho
Special – Ultra-fresh, Alaskan Halibut (cut in house from whole fish), pan-seared and finished with fresh morels and fresh English peas, served on a bed of carrot-thyme risotto.
Suggested Wine – Chateau Potelle Chardonnay

Specials – Saturday, July 17
Soup – French Onion with authentic Gruyere
Special – Grilled, Kanas-raised American Bison Ribeye steak finished with a roquefort blue cheese sauce, and sauteed fresh chanterell mushrooms. Served on a bed of dill-scented mashed yukon gold potatoes with grilled asparagus.
Suggested wine – Cain Cuvee Napa Valley Cabernet Sauvignon blend

This Weekend’s Prix Fixe Menu
Amuse – Avocado gazpacho with tomato concasse
Starter – Traditional Cassoulet, white beans, pork, ham, duck, fresh herbs and tomatoes slow roasted together
Entree – Friday – Alaskan Halibut with fresh morels
Entree – Saturday – Buffalo Ribeye with Roqefort sauce and chanterelles
Dessert – Creme Brulee filled homemade crepes with fresh berries
